Veggie “Rice”

Cut the cauliflower, broccoli or sweet potato into small pieces, grate, or zap in a food processor. Separate into portions and freeze for later use. To sauté, add oil and the “rice” to a preheated frying pan and start sautéing for 2-3 min. Then season with salt and spices (to taste) and stir to avoid burning. Remove from the heat when cooked through and when it has the desired flavour and texture.
