Cozido à Portuguesa

Ingredients

500g beef (seasoned with salt a day in advance) • 500g pork (seasoned with salt a day in advance) • 1kg of pork and beef bones • 1 chouriço sausage • 1 morcela sausage (black pudding) • 1 farinheira sausage • 250g smoked bacon or ham • 1 spring cabbage • 1 coração de boi or Portuguese cabbage • 4 carrots • 1kg medium sized potatoes • 2 turnips • 1kg rice • 4.5l water • Salt to taste

Method

Season the pork and beef with salt overnight • Boil the meat and the sausages in a large saucepan • Once cooked remove one litre of water to cook the rice in • Use the rest of the water to cook the potatoes, the turnips and then just before they are ready add the cabbages so as to not overcook
