Ribs and Chips

Information

Cook Time: 75 minutes + 12 hours marinating time Preparation Time: 20 minutes

Ingredients

1kg pork ribs (divided into four large pieces, 250g each) Marinade: 300ml dark soy sauce • 100ml water • 3 tablespoons runny honey • 6 cloves of garlic, finely chopped • 2 teaspoons salt • 1 tablespoon piri-piri or Tabasco sauce Chips: 8 to 12 large potatoes

Method

Prepare the marinade on the day prior to cooking, mixing all the ingredients in a large bowl and pouring all over the ribs • Store the ribs in the bowl with the marinade and cover with cling-film • Leave to marinate in the fridge for at least 12 hours • On the following day preheat the oven to 200ºC • Remove the ribs from the marinade and put to one side • Reduce the heat to 170ºC and cook the ribs on a baking tray for one hour, turning the ribs every 15 minutes and drizzling with more marinade • In the meantime wash and peel the potatoes • Cut into chips and wash again • Dry them carefully • Fry them twice: the first time at 160ºC, removing and left to cool before cooking again at 180ºC • Serve with the ribs • Serve the Ribs and Chips with a green salad and a nice glass of the Faustino Gran Reserva
