Roast Beef

Ingredients

Mixed lettuce • Handful basil leaves • 1 tablespoon honey • 1 garlic clove finely chopped • 1 tablespoon balsamic vinegar • 1 tablespoon lemon juice • 5 tablespoons olive oil • Salt & pepper • 100g Roquefort cheese • Juice of ½ a lemon • 3 tablespoons crème fraîche • 2 tablespoons toasted pine nuts • 400g sliced roast beef from the delicatessen

Method

Wash the lettuce and toss together with the basil Dressing: Mix together the honey, garlic, vinegar, 1 tablespoon lemon juice, 4 tablespoons olive oil, salt and pepper Cheese sauce: Crumble the cheese, adding 1 tablespoon of olive oil, the juice of ½ a lemon and crème fraîche • Stir well • Divide the lettuce-basil mix between four plates • Drizzle with the dressing • Share the roast beef between each plate and drizzle with the cheese sauce • Sprinkle each dish with pine nuts
