Braised Turkey

Ingredients

Turkey, prepared and stuffed from the Apolónia butcher • Butter • Pepper and salt Side Dishes: Small potatoes, carrots, celery, peeled chestnuts, parsnips, onions, garlic etc, placed in the roasting tin alongside the turkey • Fresh herbs, such as sage and thyme • Small pumpkins / squash, halved,flesh removed and mixed with apple and red cabbage

Method

Preheat oven to 200ºC • Sprinkle stuffed turkey with salt and pepper and baste with plenty of butter • Reduce heat to 165ºC and put turkey and your favourite vegetables in to roast • Every ten minutes, baste the bird with more butter and ensure that the turkey does not dry out (you can even place a bowl of water at the bottom of oven) • Halfway into the cooking time add the herbs, and the pumpkins stuffed with the apple-cabbage • When turkey is ready (trick: meat is ready when easy comes off at the legs) • Remove the vegetables and potatoes and serve
