Pork and Kale Stew with Bratwurst

Ingredients

1 kale • 2 tbsp vegetable oil • 1 large onion • 2 tbsp oats • 4 Silesian bratwurst •
200g pork loin (smoked if possible) • Salt and freshly ground pepper •
50g butter • 1 tsp ground nutmeg • 600g potatoes

Method

Wash the kale and separate the leaves removing the stalks • Heat a pan of salted water and blanch the kale leaves for 1 or 2 minutes, before cooling them, draining and cutting the leaves into small squares • Heat the oil in pan and sweat the chopped onion • Add the chopped cabbage, cooking over a low heat and adding two cups of water or stock and the oat flakes • Add the smoked pork (if raw pork loin, sauté beforehand in a little oil, seasoning with salt and pepper) and cook for about 30 minutes • Add the nutmeg and check the seasoning • Roast the potatoes in their skins and once lukewarm, peel cut into pieces. Sauté in butter until golden, and season with salt and pepper • Grill the Silesian bratwurst and serve with the kale and pork loin.

Tip: You can replace the bratwurst with bockwurst or frankfurter and stew with the kale.
