Anchovy Tarteletes

Ingredients

•  2 packs of 9 tartlets ‘3 Toques’
•  80g Skandia smoked anchovies
•  2 red tomatoes
•  1 red pepper
•  1 red pearl onion
•  20ml olive oil
•  Oregano to taste

Method

Chop the anchovies, saving some for decoration •  Peel the tomatoes, quarter, remove the seeds and cut the flesh into little cubes •  Roast the red pepper over a flame and remove the skin and the seeds, cutting into little cubes • Chop the red pearl onion and mix with the anchovies, the tomatoes, and the peppers, seasoning with olive oil and black pepper • Fill the tartlets and decorate with an anchovy fillet
