Pumpkin Soup

Ingredients
2kg pumpkin, peeled, deseeded, cut into pieces • 4 onions 2 bulbs of garlic • 1 small chilli pepper, deseeded, finely chopped • 2 tablespoons fish sauce (Asiatic product) • 400ml coconut milk • 1 sprig of fresh lemon grass, soft part cut in small rings • Pepper & salt to taste
Method
Preheat oven to 180ºC • Bake the whole onions, garlic and cleaned pumpkin on a baking tray for 25 minutes • Remove and peel onions and garlic • Blend together with fish sauce • Place in a saucepan, adding the red chilli pepper, lemon grass and coconut milk • Cook for 30 minutes over a medium heat • Add water if necessary, and pepper and salt to taste • This soup goes well with cooked shrimps and toast • Serve in a bowl or inside an empty pumpkin
