Pumpkin and Sweet Potato Gratin


2kg Pumpkin • 25ml walnut oil, Bizac • 1kg Sweet potatoes • 1 Onion, very fine sliced • 1 Azeitao cheese • 1 Monchique Black Pork Chouriço (Deli Counter) • 2 Eggs • 1 Bag breadcrumbs “ Ramazzotti” • Flor de Sal Maria do Monte


Peel the pumpkin and sweet potatoes and grate them • Season with Flor de Sal • Fry the Chorizo to release its oily juices • Mix this juice and all the ingredients (except the breadcrumbs) and place in a gratin dish • Top with breadcrumbs and drizzle with some walnut oil • Bake for at least 30 min at 160ºC
