Spicy Prawn & Lime Burritos

Ingredients

500g cleaned prawns (intestine removed) • 1 Old El Pas spice blend for burritos/fajitas • 1 pk Old El Paso tortillas (8) • 1 jar Doritos Sour Cream 300g • 2 limes (zest & juice) • ½ medium cos lettuce • 1 red onion • 1 sprig fresh coriander • 2 tbsp olive oil

Method

Mix the Old El Paso spices with the olive oil, the juice and grated zest of the limes • Keep half of the mix for later • Mix the prawns with half of the marinade, coating well • Sauté over a high heat in a non-stick pan, continually stirring until cooked • Once off the heat add the remaining marinade and coat • Cut the lettuce into strips and heat the tortillas in a hot oven for about 60 to 90 seconds • Cut the red onion into thin semicircles and roughly chop the coriander • Place the lettuce in the centre of each tortilla, along with a tbsp of prawns, a tbsp of Doritos sour cream, a few onion slices and coriander • Roll into burrito shape, as explained on the pack

NB: alternatively, you can buy kits containing the spices, the spicy sauce to serve separately and the tortillas • Ignore what it says on the pack, as 4 minutes at 180ºC is clearly too long and will destroy the tortillas
