Guinness Braised Mussels

Ingredients
2kg fresh mussels (cleaned 6 bearded) • 1 onion • A sprig of fresh thyme •
150ml Guinness • 150ml fresh cream • 50g chopped scallions
Method
Heat a heavy pan with a tight fitting lid • Add the mussels, chopped onion, Guinness and thyme • Cover and cook until the mussels open (shaking occasionally) • When they have opened add some cream and sprinkle with chopped scallions • Serve immediately with fresh Irish soda bread
