Bacalhau à Brás

Ingredients
• 500g Dias codfish strips
• 150ml olive oil
• 3 garlic cloves
• 1 bay leaf
• 2 large onions
• 3 potatoes
• Oil for frying
• 1 sprig parsley
• 6 eggs
• Freshly ground pepper
• 50g black olives
Method
Slice the onion and chop the garlic • Chop the parsley and cut the potatoes into fine strips, defrosting the codfish and squeezing lightly to remove some of the water • Place the olive oil in a non-stick pan and sauté the chopped garlic and onion at the same time to not burn the garlic, adding the bay leaf • When the onion is soft add the codfish and cook for 2 to 3 minutes • Fry the potatoes separately in the oil and season with black pepper, chopped parsley and add the beaten eggs, mixing well. Do not allow to cook dry • Add the olives and serve quickly.
