Battered Sardine Fillets

Ingredients
• 12 sardines
• Juice of 1 lemon
• 2 tbsp flour
• 1 pinch paprika
• 2 eggs
• 200ml oil
• 1 sprig chopped parsley
• Freshly ground black pepper
• Sea salt to taste
Method
Remove the scales and the heads of the sardines • Slice into the belly and remove the guts • Using a small knife remove the central spine, keeping the two fillets together • Season with salt and pepper and a few drops of lemon juice • Mix the flour with the paprika and beat the eggs with the chopped parsley • Coat the fillets with flour, removing any excess and dip in the beaten egg, and fry in a pan with hot oil • When cooked, drain and then dab with kitchen paper • Serve with lemon segments
Tip: An easier way is to use separated fillets. Alternatively, ask Apolónia’s fish counter assistants (Almancil only) to prepare the fillets for you
