Courgette Rolls

Ingredients
• 2 courgettes
• 1 tin Maná anchovy fillets
• 125g ewe’s requeijão Seia
• 1 sprig basil
• 1 sprig thyme
• 50ml olive oil
• Pinch of salt
• Freshly ground pepper
Method
Cut the courgettes lengthways into 5-mm slices, and season with salt, pepper, olive oil and thyme • Wait half an hour and fry the courgette slices in a non-stick pan, keeping for later • Crumble the requeijão into a bowl, seasoning with black pepper, olive oil, chopped basil and add the chopped anchovies • Roll up a little of this mixture in each courgette slice and fix with a cocktail stick • Serve cold
