Presunto and Azeitão Cheese Snack

Ingredients

• 1 Apolónia bakery 5-cereal baguette
• 70g Espina Serrano presunto ham
• 1 Azeitão DOP cheese (250g)
• 1 sprig chives
• ¼ pk. Vitacress ‘Italiana’ salad
• 20ml olive oil
• 1 Kumato tomato
• 1 garlic clove
• Freshly ground pepper to taste

Method

Diagonally slice the baguette into 8 slices, each 1-cm thick • Peel the tomato and remove the seeds, cutting the flesh into little cubes • Lightly toast the bread, and rub the surface with the garlic • Drizzle with some olive oil • Sprinkle with about half the tomato cubes • Put some of the salad leaves on to each slice and top with the slices of ham • Spoon out 8 spoonfuls of Azeitão cheese (at room temperature) and place on the slices • Season with freshly ground black pepper and sprinkle with the remaining tomato and the chopped chives • Drizzle with the remainder of the olive oil and fix the toppings with a cocktail stick • Serve immediately
