Maizemeal With "Picos"
Method
Chop a piece of pork into small pieces (“picos”) • Fry them in some lard, with garlic and bay leaf • Season with salt • Put to one side • Heat a saucepan of salted water • When the water is lukewarm, add a spoonful of the “picos” juices • Very slowly, add the maize meal, so as not to become lumpy • Mix continuously with a wooden spoon, until the maize meal is cooked • Serve topped with the meat “picos”
