Courgette Cannelloni

Ingredients

1 small onion, finely chopped • Olive oil • 1 clove garlic, crushed • 225g tin chopped tomatoes • 1 tablespoon Italian herbs • 2 large courgettes • 125g mascarpone cheese • Cocktail sticks

Method

Preheat the grill on full heat • Fry the onions gently in a small saucepan in little olive oil till soft • Add the garlic and fry for a few minutes • Add the tomatoes and seasoning and bring to the boil • Reduce heat and simmer, uncovered, for 30 minutes until the mixture becomes a thick pulp • Top and tail the courgettes and cut lengthways into ½cm slices • Line the grill tray with foil and brush with olive oil • Lay the courgettes slices on the tray, brush with a little olive oil and grill • Turn slices over and repeat, set aside until cool • To make the canapés spread each courgette slice with 1 tablespoon of mascarpone • Top with a layer of tomato sauce, then roll the slice up and secure with a cocktail stick
