Acorn with Yoghurt, Honey and Mint Foam

Ingredients

Acorns • Honey • Yoghurt • Milk • Pistachios • Orange • Mint • Basil

Method

Boil the peeled acorns • Remove • Grind until flour • Make some fine flour from the pistachios and add yoghurt, milk, honey and mint • Add lecithin • Make some foam with the help of a hand blender Serving: Place the acorn preparation in a mould • Pour over the foam • Place a basil and orange rind strands on top
