Cashew Chicken

Ingredients

• 400g onion
• 250g tomato
• 800g cubed chicken breast
• 2 tbsp oil
• 2 bay leaves
• ½ tsp curcuma
• ½ tsp cumin seeds
• ½ ginger paste
• ½ coriander seeds
• 2 garlic cloves
• 4 tbsp Patak’s korma curry paste
• 2 tbsp cashew nuts
• 2 tbsp fresh coriander leaves
• 1 tender spring onion
• Salt to taste

Method

Heat the oil and fry the bay leaves and coriander seeds, adding the roughly chopped onion • Leave to cook • Add the tomatoes and cook for 2 to 3 more minutes • Add the curcuma, the cumin, the ginger and garlic, mixing well • Add the curry paste and cook for another 5 minutes • Add the chicken and cook with the pan covered for 6 to 8 more minutes, adding the cashew nuts and checking the seasoning • Plate up and garnish with the coriander and spring onion
