Organic beef with grilled vegetables

Ingredients

• 600g Elipec organic beef chuck steak
• 1 tsp Nomu Beef Rub
• 1 Urze organic courgette
• 1 Urze organic aubergine
• 1 Urze organic red pepper
• 1 Urze organic green pepper
• 1 small Urze organic red onion
• 250g Vitacress organic pear tomatoes
• 5 cl white wine
• 2 cloves Urze organic garlic
• 1 sprig chives
• 2 tbsp olive oil
• 1 sprig thyme
• 1 pinch flor de sal
• Black pepper

Method

Cut the aubergine in 5mm-thick slices and season with salt, freshly ground pepper, olive oil and thyme • Cut the peppers into strips and season in the same way • Colour the vegetables under the grill and finish cooking in the oven • Season the meat in with the Nomu spice rub • Wait 20 minutes and cook in a little olive oil until cooked to taste • Plate up the grilled vegetables in little piles and top the respective steak with a sprinkle of flor de sal • In the pan you cooked the meat, sauté the chopped red onion and garlic cloves, add the pear tomatoes, opened in the middle, and then chives, refreshing with the wine • Plate up around the meat/vegetables • Finish the dish with a small bunch of greens, drizzled with olive oil
